Rice Pudding

This low-fat, tasty dessert makes a delicious after school snack. This recipe can be served warm or chilled. Sprinkle with nutmeg for extra flavor.

Ingredients

     ¾ cup egg substitute
     2 cups fat-free milk
     ½ cup SPLENDA® Granular
     
½ cup dark raisins
     1½ cups cooked white rice
     1 tsp. vanilla extract
     ½ tsp. salt
     1 tsp. ground cinnamon
     1 tsp. ground nutmeg


Directions

  1. Preheat oven to 325o F. In a large bowl, combine egg substitute, milk, SPLENDA, raisins, cooked rice, vanilla and salt. Mix well.
  2. Add cinnamon and nutmeg.
  3. Pour into a 10x6" glass baking dish. Bake for 25 minutes. Sprinkle with cinnamon and stir.
  4. Continue baking for an additional 40 minutes or until knife inserted halfway between edge and center comes out clean.
